The brewery was built in 1849 for Mr William Cooper, this consisted of a 70 barrel liquor back, a six-horse power steam boiler for cask cleaning, a 14 barrel boiler round and underback, a 5 quarters mash tun, 2 coolers, 3 squares, 4 stillions and force pump with fittings, also 4 twenty-five barrel and 2 twelve barrel store vats and malt mill. This "Capital Brewery" and the market and commercial Inn, The Bull, situated in the town centre of Ongar was sold on 29th November, 1856 on Mr Cooper's death. It was purchased by Johnathan and James Palmer who continued the trade to 1884, when they sold the brewery to James Coleclough, he continued to 1887.

By 1906, Ernest James Palmer was the brewer who was later joined by James Coleclough in a partnership which lasted to 1910. For the next two years Palmer once again continued on his own until he sold out to McMullen & Sons Ltd., they ceased brewing but used the site as a local delivery depot and stores up until 1914.

The near by Stag public house was purchased by McMullens at about the same time as they purchased the brewery. The Two Brewers public house may well commemorate either of the two brewing partnerships just up the hill.

Most of the brewery buildings have been demolished, all that remains are some old workers cottages and the stable block, now converted to residential use, and the owners fine Georgian house named "Dyers".
