Gates two beers; Reservoir at 4.6%ABV, 25 degrees EBC and 30BU and Damn at 5.0%ABV, 50 degrees EBC and 35BU

The cooling coil is immersed in the hot wort and is cooled overnight to 20 degrees C

Yeast is kept in the fridge. Gates uses White Labs English Ale strain
